A fabulous place and a fabulous teacher. I went on the Moroccan course which was a present from my sister. We had a fantastic time, learnt so much and enjoyed the fruits of our labours. Small classes mean virtually 1:1 tuition, and Giuseppe has the patience of a saint! Full of colour, flavour and wonderful aromas. A totally immersive experience. Highly recommended.

I have attended two course over the last month, Italian and vegetarian Indian. Both have been lovely and laid back with cooking as a group the way to go. Giuseppe is calm and has great tips and knowledge and its good to learn in small group.I would highly recommend this cookery school

I have been to a few courses with Giuseppe at the Olive Tree, it's always a great experience. Highly knowledgeable, friendly teacher and very hands-on; almost best of all, no washing up!! Have a lovely catalogue of recipes all of which have been delicious and are carefully planned to teach a number of replicable techniques.

Fantastic little cookery school just on the out skirts of corfe castle. Guiseppe is knowledgeable and easy to learn from. Running many different courses to suit you. I attended the canapé evening course. There were 4 of us, and it was really fun working through all the recipes. We actually achieved a lot in a few hours. Got to taste it all without being rushed and took home a folder with all the recipes in.

My two visits to the Olive Tree have been fantastic. I did Indian Cookery first, which taught me some good knife skills and of course some lovely recipes which I’ve used ever since. I’ve just done Coastal Foraging. This was a really fascinating day. We spent a couple of hours learning and gathering all sorts of ideas hinge from pretty flowers, to seaweed, to little shellfish and a variety of what looked like weeds but which turned out to be delicious sea-veg. Then we returns to cook it all into a truly memorable 3 course lunch. Giuseppe is a really accomplished chef, super well organised, keeps everyone busy and involved and offers a fabulous range of courses. Highly recommended; I’ll be going again!

Recently attended a chefs table with my family and had an absolutely amazing evening with Giuseppe.We were warmly welcomed on arrival with hot and cold canapes and prosecco, homemade elderflower cordial for the non drinker in our group which was also delicious.Over the course of the evening he would prepare 3 dishes we had pre selected. While we enjoyed the canapes he set up to prepare the first dish, local asparagus, samphire and fried qual eggs with hollandaise sauce.As he prepared the dish he explained where the ingredients had been sourced as well as how to prepare them such as how to open quail eggs the easy way and a how to prepare a rue so quickly and easily my mum was pretty much dumbfounded. The completed dish soon followed, accomanied by a very pleasant Greco di Tufo.The main course was a rack of Purbeck lamb with sauteed potatoes, sea spinach and green beans, accompanied by a port jus. While this was being prepared we had a chance to learn about Giuseppes career as a chef and his own culinary guilty pleasures as well as learning how to cook a perfectly rare cut of lamb with a crispy exterior and that I have been significantly overcooking veg. He also shared some tips on how to control portion size when provisioning to serve a larger group.Soon the prepared lamb was served with a rich Chianti, a second helping was offered and graciously accepted!With plates cleared, in some cases for a second time it was on to dessert, a nectarine and almond tart with an orange and ricotta cream. The learning continued with an easy to make pastry and some tips on how to handle and prepare it efficiently to help keep it cool and at its best as well as some pointers on blind baking pasty cases for later use...With desert served and thoroughly enjoyed the evening came to a close with nearly 3 hours gone in what felt like a fraction of the time..If you are in the area and looking for an experience with your family or with some friends I would really recommend considering Giuseppe and what he has to offer. Not only does he do chefs table dining but he runs more formal cookery classes covering various aspects of itallian cooking and for the more adventurious types he offers coastal foraging lessons combined with preparing and eating what you forage. He can also accomodate for allergies and intolerances if required!In short.. A fabulous evening with a passionate and knowledgable chef who is a truely nice guy!
